Weight classes follow USDA sizing, which is contracted on minimum net weight per dozen. Grades follow the USDA AA / A scheme. Eggs are washed and chilled to the US and Gulf model; buyers requiring unwashed, non-refrigerated EU Class A stock should ask us before ordering, as that is a different specification.
